Good morning with eggs and avocado on sourdough

A simple and delicious idea to “break the fast” in the morning. Pair a soft boiled egg with sliced avocado, chopped parsley, and pepitas on a beautiful rye sourdough bread for a nourishing and satisfying breakfast option that will keep you energized for several hours. This will provide protein, carbs, fats, and fibre for sustained energy.

After fasting for 7-8 hours, it is important to start the day with a nourishing meal containing a good source of protein and fats to set your metabolism for the day. Eggs are a highly nutritious food. A large egg (50 grs) provides 6 grams of high-quality protein and all 9 essential amino acids.  One large egg provides 600 milligrams of the amino acid Leucine,  important for muscle development and maintenance. Eggs are a good source of choline and selenium, vitamin B12 and B2 which support liver function. It also provides Vitamin D, e important minerals: magnesium, potassium, phosphorus, calcium, zinc, and sodium.

Tips to prepare poached egg:

  1. Make sure your eggs are fresh.
  2. Add water to a saucepan on medium heat, and a dash of apple cider vinegar to the water.
  3. Once the water is simmering (but not boiling), crack the egg in a small bowl.
  4. Gently add your cracked eggs, apart from each other if cooking more than one.
  5. Poach the egg for 3 minutes. Then remove with a large spoon or spatula.
  6. Drain and dry with paper towel.
  7. Serve as you like.
