I have not always enjoyed the level of health I do now. I have had multiple health issues from my childhood and early teenage years. Severe allergy and respiratory problems. I developed autoimmune thyroid in my late teens, and it has been a long journey to fully understand what was wrong with me, my diet, and lifestyle. As I was learning more about autoimmunity and the huge effects of a low self-esteem on health, I started to implement changes in my diet and lifestyle. Gradually, they have produced significant improvements to my health over the years.
I have been managing my autoimmune thyroid without medication for over 15 years. I have enjoyed the best level of health I had ever experienced until 6 years ago. A severe infection caused new health issues which I am still recovering from. I am not where I would like to be with my health yet, but I am on my way.
My recent health challenges have led me to study nutrition. I have always loved food and cooking. Since I have been learning human physiology, and the medicinal powers of food, I have come to appreciate another aspect of foods other than simply providing energy and building blocks to our bodies. Whole foods have numerous biologically active compounds which can interact with our genes to promote health. We all have heard the saying: ‘we are what we eat’. More recently we have also discovered what we feed our intestinal flora has an immense impact on our health. Our food choices define the quality of life we lead.
