Breakfast this morning, a nice meal option to start the day with sustained energy: Rolled oats and banana pancakes served with a tablespoon of coconut yoghurt, fresh raspberries and a drizzle of honey! This pancake recipe is from one of my favourite lectures Tess, with a couple of twists . Wonderful combination! Let me know what you think if you decide to try them.
- Oats are good source of soluble fibre and assists lowering cholesterol,
- Bananas are a good source of potassium,
- Flaxseeds are high in fibre, antioxidants, omega 3 and lignans,
- Berries are high in antioxidants.

Rolled oats and banana pancakes
These pancakes offer a nice meal option to start the day with sustained energy!
Ingredients
- 3/4 cup rolled oats
- 2 eggs
- 1 banana
- 2 tablespoon flaxseeds
- 1 cup almond milk or milk of preference
- 1 teaspoon cinnamon
- 1 heaped teaspoon baking powder
- Butter or olive oil for cooking
Instructions
- Blend all ingredientes together until smooth.
- Add butter to frypan and cook the pancakes.
- The batter is thick and you may need to spread it using a tablespoon.
- Serve with a drizzle of honey or mapple syrup and your favourite fruits or yogurt.
